- Edythe Newman’s Matzo Stuffing – Combine two large onions, two Gala apples, three celery stalks, half a cup of olive oil, two eggs, one tablespoon of ground cinnamon, and two tablespoons of poultry seasoning salt in one bowl. Preheat the oven to 350 degrees. Add one-third box of matzo meal and a cup of chicken broth. Stir, then add another third of matzo meal and half a cup of broth. Finally, add the rest of the matzo meal and broth. Stir until it has a stuffing-lift consistency. Move the stuffing to an oiled three-quart casserole dish and cover it with aluminum foil. Bake it in the oven for 45 minutes then remove the foil and bake for 30 more minutes.
- Spiced Cranberry Sauce with Orange and Star Anise – Create a sachet of allspice and star anise in a cheesecloth. Combine sugar, orange juice, and a quarter of a cup of water to a medium pot. Add the sachet and stir until the sugar melts and bubbles begin to form. Let it steep for 10 minutes. Return the pot to the stove and add cranberries and zest. Cook for around seven minutes then discard the sachet. Chill the sauce until it’s ready to serve.
